A Distinguished Honor for Hickory NC Restaurant Chefs to Be Selected for New York ‘Small Towns, Big Flavors’

Highland Avenue is thrilled to participate in the upcoming ‘Small Towns, Big Flavors’ dinner to be held at The Beard House on April 18, 2016. The dinner by the James Beard Foundation will be prepared by specially selected chefs from across the country, and two of Highland Avenue’s chefs have been selected.

Chefs Kyle McKnight and Sam Stachon will be preparing the following menu items for the dinner:

  • Carolina Heritage Souse with Jimmy Red Corn–Benne Seed Pones, Sweet Potato Mustard, and Watermelon Pickles
  • Pecan Wood–Smoked Heritage Pork Shoulder with Fermented Geechie Boy Mill Farro Grits and Preserved Chile Braisage

This celebration will be attended by members of the Carolina Moon Hospitality family: Ron and Meg Locke, Will Locke, Robert Locke, Margaret Locke, Natalie Stachon, and Mariah Chalk.

The mission of the James Beard Foundation is to celebrate, nurture, and preserve America’s culinary heritage and future. Towards this end, chefs are invited to “perform” at The Beard House by presenting lunches, brunches, workshops, and dinners to Foundation members and the public. The Beard House is located at 167 W 12th Street, in New York NY.
